SWEET POTATO AND LENTIL CURRY

Have you heard of a saying curry in a hurry? This recipe is just that!

It’s the end of the week, the pantry and fridge are almost bare and you have hungry little mouths to feed. This is super quick and tasty.

Sometimes I will get hubby to grab a cooked chicken on the way home from work to shred toss through. Simply serve with with some brown rice, or cauliflower mash.

 

Serves 4

What you need..

2 large sweet potato’s peeled and chopped into chunky squares

1 can of organic canned lentils washed and drained

2 tins organic crushed tomatoes

4 cups of mixed vegetable (cauliflower, zucchini, carrot.. whatever you have on hand)

2 onions finely diced

1-2 cloves crushed garlic

3 tbsp. curry powder

2 tsp. cumin seeds

2 tsp. mustard seeds

1 tbsp. coconut oil

2 cups vegetable stock

½ cup coconut milk or Greek yoghurt

 

 

 

Steps

  1.  Heat coconut oil in a large deep fry pan then add onions, garlic and spices. Cook until fragrant
  2. Add potatoes, tomatoes, stock and lentils
  3. Bring to boil then add remaining vegetables. Put a lid on and simmer until the potatoes are tender
  4. Stir through coconut milk or yogurt and serve with brown rice, or cauliflower rice

  6. TIP:  To make a little sweeter for the kids add in a few chopped dates during the cooking process.
