Coconut Coffee Protein Ball Recipe

What you need..

2 tbsp. Stay Strong Mummy Coconut Whey Protein Blend 

1 cup almonds or walnuts soaked in water overnight

1/2 cup cashews

10 mejool dates

1/4 cup cacao powder

1-2 shots of espresso ( or 2 tsp. instant coffee dissolved in 1/4 cup water)

2 tbsp. cacao nibs (optional)

 

What to do…

Place nuts into the food processor and blitz until broken down.

Add chopped dates (pip removed) protein, cacao powder and coffee. Blitz in blender until ingredients combine and sticks together.

Remove and roll into balls. For variety you can roll individual balls into cacao powder, cacao nibs or coast with a layer of coconut protein blend.

Store in an airtight container in the freezer.
